Two issues to consider are what your retention period will be, and also the cost/speed of your storage. Some platforms charge a sizeable amount for storage so you're smarter moving your long-term, but unfrequently-accessed, items in slow but low-cost storage. However, other platforms charge primarily on compute to encourage you to store as much data as you can and only really pay when you use it. Whatever you choose, be sure to understand your costs upfront.

Cost and Data availability and accessibility clauses.
Cost will increase if you keep all data on storage and in case you don't want that readily available, move it to less expensive storage.
All depends on the use case and commitment to your customers.
