I believe the question should be the opposite: how do you think to protect your Organization front he contents generated by the GenAI? 
That's the challenge and check the NYT lawsuit to understand some of the reasons.

We don't! In the organisations that I worked with so far, generally we don't use GentAI output as-is. When it is only used for assisting a human and the final output is a human generated result using tools (including GenAI), this concern doesn't apply.

It's really going to depend on how you use that IP, but even then I'm not sure it's really worth protecting in the traditional sense like through trademark or copyright.

You'd typically only worry about that if it was commercially sensitive - and if you're using GenAI as a profit line then what do you trully own?
