I am looking to find a way to setup work between my assistant and myself, as this is a new work relationship. Would any of you have a list of tasks or how work is shared between your assistant and the manager?

I use Microsoft Teams. In the embedded apps there is a MsTasks Plugin, what you get is a list of assignments, you can assign priority and who will take care of it. finally you  have also a view as a Kanban board where your assistant could pick the unattended/unassigned tasks to complete them.

Best is to first start sharing expectations, What do you expect as a manager from your assistant, and what does you assistant need from you to do so. Also, what would you define in terms as need-to-know and nice-to-know, helping to set priorities. After that, way of working on the how. And keep communicating to get to know eachother!
