As someone with no background in IT / CS, I am working on a project that requires me to get some understanding of the entire IT / systems landscape of a company - i.e. the various Hardware and Software requirements as well as the market leaders offering these products and services.  What report / webpage / any other resource would be a good starting point to understand this basket of markets?

That sounds like a tough ask for someone with no IT/CS knowledge. Are you talking generically or the needs of your specific company? Is it large and well established, or a small, new startup?
Any tech company will tell you that the business requirements need to be identified first, then you look for integrated solutions.

What about the process landscape of the company, you're investigating, extended by the corresponding (current) IT systems supporting them?

This might be the best option to start learning, what a future IT system should be capable of.

no single report can help and cover all, but I suggest to approach this from these angles: Data, AI/ML, Security (TRiSM) and platform/Infrastructure (including hardware).
Some Gartner reports can help at high level.
